Threadlock isn't really optional any more.
Back in the day you could just tighten down bolts on a bike and be done with it. Today you need a torque wrench and threadlock to make sure that things don't get stripped or fall out.
For most bike application blue threadlock does the trick.
Pros: Only requires a small amount. Usually good for more than one tighten/remove cycle of the bolt.
Cons: Expensive but a little goes a long way. Most bolts only need a drop or two to get a good lock.

The best stuff to keep your parts on and still have the ease of removal later. A bit pricey but this stuff has never let me down. Keeps rack/fender bolts from rattling loose and keeps any number other mounting bolts from shaking free. A little bit goes a long ways.
Pros: Keeps small boots from shaking free. Only need a small amount for each application. Works to keep parts on but also allows for easy removal later.
Cons: A bit pricey.
